I have been searching for a new recipe to get my toddler to eat. It is rare the kid will eat anything. I once saw a recipe similar on Pinterest but with spinach. To me the image looked so good with Basil. So I kind of just whooped the recipe up. Not only was it toddler approved but my gosh this has just moved to one of my favorite meals. Not to mention how easy peasy it is and takes about 25 minutes of your time. So lets get this started. Here is what you will need.
- Half onion
- 1 tbsp olive oil
- 6 oz of beef sausage
- 14.5 oz petite diced tomatoes
- 2.5 cups of chicken broth
- 2 tbsp fresh basil
- 12 oz wide egg noodles
- 1 cup of pepper jack cheese
So now that you have everything you will need lets get to cooking my dear friends.
First you are going to chop up half an onion. I could have used a whole onion but I did not want an overwhelming onion taste. So I just chopped and diced half an onion and I started to cut and dice the beef sausage. I only used half of the sausage. It is very important you slice it very thin. Then I added about 1 tbsp of olive oil to a large pan and started to saute the onions till they were a bit brown. Soon after I added the beef sausage and browned it.
Once the beef and onions were browned you want to turn off the heat. Now you are going to add the whole can with the juice and all of the diced tomatoes. Add 2.5 cups of your chicken broth. Put your egg noodles in and stir. Fun fact I purchased these egg noodles at the dollar tree for a dollar! This sort of excited me. But I guess I never paid any attention to how much they were at the grocery store. Anyways back to cooking. Next add 2 tbsp of basil and salt and pepper to taste. I personally don’t ever use just regular salt when I season my food. It is just to plain for me. I need some excitement. I always use Lawry’s Garlic Salt with Parsley. I absolutely love this stuff. Now turn your heat back on to medium high heat and bring to a boil. Once it has begun to boil your going to lower the heat and leave it at low and cover while stirring occasionally. After about 15 minutes your pasta should be soft and done. Now your going to stir in about 1 cup of pepper jack cheese with the heat still all the way on low. Stir it until it has melted all the way. Alright my friends that is it. It is that simple. Your now ready to serve and eat. So go sit and enjoy this wonderful meal. My toddler did love this meal but one thing I did do was made a separate plate before I added the cheese. Due to my poor baby having a lactose intolerance. To make more kid friendly you can probably use mozzarella cheese instead of pepper jack. Even thought the pepper jack gives it a great kick.
